Sometimes I visit locations where I don't have direct access to the router in some locations, hotels for example or some gated community houses for rent, I wondered if its possible to connect a router with an ethernet to phone jack. Assuming such a thing even exists of course.

Does an ethernet to phone jack exist and what would it be called if such a thing exists and works. Also would it work?

By phone jack, do you mean an RJ-11 connector? What are you trying to do? Do you want to get internet access via an analog phone line using a modem? Or do you want to connect an analog phone to a digital network?

You have GrapheneOS on a Pixel phone, right? Just use the wifi hotspot function on your phone to convert your mobile signal into wifi for your laptop. That's what I do. I don't trust hotel internet for the most part.

Also wondering if phone bill will go up if i do this.

Run your laptop traffic through Tor or a trusted vpn if you are worried about the security of the connection.

I don't know if it will cost you more - just need to find out what is included in your phone plan.

If you have an analog phone line available, and if you have an ISP that provides service with a modem on analog phone, you can use that, but in most places where I travel that is not available, and this would rather slow by today's standards and also cost phone calls.

Besides, I don't know what you mean by "secure". When you access internet, the ISP can certainly spy on you, no matter the ISP. If you trust more a VPN provider than an ISP, you can use a VPN, or use TOR as suggested by andyprough.

Personally, I run a VPN server on my home router (libreCMC), I just followed the instructions from the openwrt website for this, it works (except that currently, my home connection is IPv4 only, so I need to disable IPv6 on the computer, otherwise, it will use IPv6 without going through my VPN).
